The Ceps are out in force 2008

I just can't believe the difference between this and last year. The cold snap last week has woken up the ceps. They are just every where. Last year I only found a few dozen, this year they are in abundance at my key Highland spots near Aviemore. Normally I just pick them no matter the size or condition. But as there are so many I just selected the best of the best. Below is a picture taken on 26-08-2008 @ Crubenbeg, of my trug (wicker basket) full to the brim of A1 quality Penny Bun (also known as cep or porcini), picked in under 1 hour.




Tip of the day - If the cep gets to big, they tend to get rather foamy so its best to get them young when they are hard and firm (about the size of a tennis ball). Remember always check for maggot and discard any that are badly infested. A good tip, if they are slightly foamy and gills have turned brownie yellow rather than white, you can easly peel the foam gills off before using or drying.

Get out there and get foraging. Remember if you want to stay at Highland Holiday Cottages I am more than happy to take you out for the day on foraging, for a small fee.

Remember....when gathering them, cut them with a knife, never rip them out as they will not come back next year.
