Sometimes known as sponge mushrooms, morels push up briefly in spring, often after warm rain. The most common varieties are creamy, white and wrinkled with honeycomb-like heads.
They are thought to be among the best fungi to eat, highly prized by those who forage in the wild. Woods or fields where there is sandy soil, or where there is ash from burnt ground, are the best places to look. German peasants used to burn land to encourage the growth of valuable morels.
It’s best to pick them in dry weather, and then the heads can be brushed lightly to remove any grit and insects. Washing removes some of the flavour. True morels are completely hollow when sliced in half.

Toxic & Deadly, false morels (see below) look like a tangled mass of twine and are not hollow. If you have any doubt at all, do not pick morel type mushrooms. It's all I can seem to find at the moment, but any mushroom find this time of year makes me happy.
