We enjoy our first real crop of chanterelle 2007



Above was just 10 mins gathering........nothing better than gathering free mother nature promo goods!

The texture of the Chanterelle is tender but not crumbly. It doesn't disintegrate as easily as other mushrooms, and can hold its own decently when tossed, stirred, and sautéed. They are usually found under birch trees at the edge of pine forests with moss grounds.......well Sian and Cams are!!!

Chanterelles are at their best when drizzled with a sauce made from the reduced cooking liquids with wine added, lots of garlic..ie "frenchie" style.....but they also go great with stronger asian spices such as ginger, chillies etc....try them in a pork stir fry with lost of ginger and caramel soya. If I get time I may post a recipe in the next few weeks.

Oh by the way....I heard that boletus only give good crops every two years...last year being a bumper season.....has anyone else heard this? Let me know.....I hope this year will be good as I just arranged to borrow a dryer from a friend.......

One more tip, cut all mushrooms along the vertical to check for maggots before cooking.....
